High protein, low sugar Caramel Mud Cake

This recipe is so simple with minimal ingredients, while also being high in protein and low in sugar.

Feel free to add in any extras you like (we recommend almonds and dark chocolate chunks), but other nuts or coconut would work well too!

Ingredients
2 eggs
2 scoops vanilla protein powder
2 tbsp maple or rice malt syrup
1 tbsp almond butter
1 pinch baking powder
1 pinch salt
Optional add ins: medicinal mushrooms, maca, collagen, slivered almonds, dark choc chunks
Icing
1 tbsp coconut oil melted
1 pinch salt
1 tbsp tahini or cashew butter
1 tbsp coconut cream
Optional: dash of sweetener if you like it sweet!

Method:
1. Preheat oven to 180°C
2. Stir all ingredients together until a thick dough forms. Add some coconut or almond milk if it is too thick
3. Spread into lined baking tin and bake for 20 mins or until cooked through
4. Allow to cool
5. Mix all icing ingredients together and stir well
6. Pour over cake and refrigerate until icing firms
