This warmer weather means more tropical fruit, which means mangoes are becoming more and more abundant. We’re super excited to see our favourite food popping up in the fruit & veggie isle!
They’re delicious, juicy and fibre rich!
We dunno about you, but another thing we are absolutely OBSESSED with here at the RY headquarters is CHIA PUDDINGS. They’re filling, delicious, and just so goddamn good for you! Omega rich and so versatile, we thought why not combine the two and make ourselves a sweet little treat. This is what we came up with… (and be prepared, it is AMAZING!)
Ingredients:
- 3 mangos
- 1 ripe frozen banana
- 2 cups of coconut water
- Handful of fresh mint
- 2 Tbsp of almond butter
- Pinch of cinnamon
- 2 heaped Tbsp of chia per 250ML jar of liquid
2. Pour into jars (Or glasses, or tupperware, or whatever vessel you decide on at the time)
3. Stir the chia seeds in, and still them well.
4. Leave the jars in the fridge overnight to allow time for the seeds to swell up and make the mousse/gel-like consistency, and they’ll be good to go!
The amounts of ingredients will probably differ depending on the size of the jars etc. So mix away until your tastebuds are content!
