Not all honey is created equally! Manuka honey is a niche commodity, produced by bees that pollinate a specific Manuka plant, Leptospermum. Manuka honey is regarded as highly exclusive because of the various limitations to it's availability.

Although other species of Manuka bushes are found all over the world, they cannot produce the specific flowers needed for bees to make Manuka honey. Leptospermum grows primarily in New Zealand and Australia. Additionally, Manuka honey can only be collected when these Manuka flowers bloom for the bees to pollinate, meaning there is a much smaller window of opportunity for harvest than regular honey.
