This Pear & Berry Breaky Crumble by Miranda Brady from Clean Treats is a sure way to start the day with a full tummy and a whole lot of energy!
Ingredients:
Fruit
2 pears or apples, diced
1 tsp maple syrup or honey
1.5 cups mixed berries, fresh or frozen
Crumble
100g of nuts, roughly chopped
50g gluten free flour
1 tsp cinnamon
3 tbsp rolled oats (or quinoa flakes if you are celiac)
1 tbsp pumpkin or sunflower seeds
1 tbsp chia seeds
2 tbsp coconut oil, melted
2 tsp maple syrup or honey
Method:
- Preheat oven to 180°C.
- For the fruit, add the pear and maple syrup to a saucepan with a splash of water, bring to the boil then simmer for 5 minutes until the fruit has softened. Take off heat and stir through berries.
- While the fruit is simmering, add all crumble ingredients to a bowl and stir until combined.
- Spoon the fruit into a lined baking tin and pile on the crumble mixture.
- Bake for 20 minutes until golden and serve with coconut yoghurt. This also doubles as a yummy dessert!
