If you've opened your Autumn Box and managed to resist not eating every single one of your Shelby's Cookies, then you deserve a round of applause!
These cookies are less than 80 calories per cookie, vegan, contain no refined sugar, no gluten, no artificial sweeteners and no sugar alcohols and we have been going through these boxes like crazy during self isolation!
We wanted to share with you our three favourite ways to eat these cookies:
1. A yummy brownie crumble (thank you Shelby's for this recipe!!): For the ultimate treat, crumble apart your favourite gluten free brownies and sprinkle them into the bottom of a bowl or glass and layer with a dollop of vanilla coconut yoghurt. Cut open a fresh passionfruit and scoop out all the seeds onto the yoghurt and finally top with 2 - 3 crushed Shelby’s Double Choc Hazelnut Cookies.
2. An easy and delicious ice cream sandwich: Choose your favourite dairy free ice cream (we love using a caramel swirl almond milk ice cream) and scoop out a spoonful and place between two Shelby's Chocolate Chip Cookies for an easy ice cream sandwich. For an extra hit of indulgence we like to melt down some dark chocolate and drizzle it on top of the sandwich before digging in!
3. A smooth bowl upgrade: Gather all your favourite smoothie bowl ingredients together and mix them in your blender. If you're after a new smoothie we have been loving using 1/2 cup frozen strawberries, 1/2 cup frozen mango, 1/4 cup frozen dragonfruit, a dollop of coconut yoghurt and a splash of coconut milk. Crumble 2- 3 of the Shelby's Raspberry and White Chocolate cookie on top for the perfect topper and serve in your coconut bowl.
