Herby Chickpea Bagel Sandwich

 

 

This delicious sandwich is the perfect meal for on the go - and it tastes absolutely delicious too!

Super easy to make, and good for you too. This Chickpea Bagel Sandwich should take no longer than 10 minutes to put together.

Ingredients:

  • 1 can chickpeas, drained & mashed
  • 1/4 cup parsley, chopped
  • 2 tbsp whole grain mustard
  • 1–2 tbsp V mayo ( or regular)
  • salt and pepper 
  • 2 bagels 
  • spinach / leafy greens 
  • baby cucumber thinly sliced
  • 1 avocado sliced
  • cherry tomatoes 
  • Method:

    1. Place all ingredients in a medium bowl, mix and smash with a fork until well combined. Season with salt and pepper.
    2. Spread over bagel slices and top with leafy greens, baby cucumbers, avocado and cherry tomatoes. Enjoy!
