Classic dahl with a delicious nutty twist

This comforting, one-pot recipe is high in fibre, plant protein & so delicious!
And by adding peanut butter to this classic Dahl  it takes it to the next level, trust us.

Better yet, it takes less than 30 minutes to make, so its the perfect busy weeknight dinner recipe! 

CREAMY SATAY DAHL
(vegan, gluten-free)
⁣Serves: 2-3⁣

Ingredients:
1 cup chana dal (split chickpeas) ⁣
1 cup coconut milk ⁣
2 tablespoons peanut butter
1 1/2 cups water ⁣
1 tablespoon coconut sugar ⁣
1 onion, diced⁣
2 cups of vegetables, we recommend sweet potato, kale, green beans ⁣
1 tablespoon olive oil ⁣
Toasted peanuts for garnish ⁣
Spices:
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1/2 teaspoon ginger
1 teaspoon salt

Method:⁣

  1. Heat up the oil in a large pot on medium heat. Sautée the onion and spices for 2 minutes until golden ⁣
  2. Add in the vegetables, split chickpeas, coconut milk, water, peanut butter, coconut sugar and salt. Bring to a boil and then reduce the heat down to a simmer for 20-22 minutes until the Dahl is thick and creamy. Stir every few minutes to make sure it does not stick to the pot. Feel free to add a dash more water if the mix appears too thick/dry.⁣
  3. Remove from heat and garnish with toasted peanuts⁣

*Storage tips: in an airtight container in the fridge for up to 3 days or in the freezer for months⁣.
