If you have been following us at RY HQ for a while, then you would know that we just love Miranda Brady aka @clean_treats and her healthy and delicious meals.
From healthy treats to remakes of all of our favourite meals, there is nothing Miranda can't whip up and we have been obsessed with her Dark Choc and Cherry Blondies which featured in our Autumn RY Magazine.
Scroll on and jot down this recipe, this is one brownie you won't want to miss out on!
1 can chickpeas, thoroughly rinsed
1/2 cup nut butter
1/3 cup pure maple syrup (could also use rice malt syrup or honey or any other liquid sweetener)
2 tsp vanilla extract
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/3 cup dark chocolate, roughly chopped
1/4 cup cherries, pitted & roughly chopped*
- Combine all ingredients (except chocolate & cherries) in a food processor until smooth.
- Fold through chocolate & cherries and pour batter into a lined baking tin.
- Bake for 20-25 mins at 180°C.
- Allow to cool and store in the fridge for up to a week.
*If you do not have fresh cherries, you can use frozen cherries instead. If so, be sure to defrost and drain the frozen cherries first so that the excess liquid doesn't alter the blondie batter.
