Orange and Cardamom Overnight Oats with Almond Fudge

Overnight oats are one of our go to recipes for breakfast!

Not only are they nourishing and delicious, but they are soo easy to make. All you have to do is mix up all of the ingredients the night before and pop it in the fridge, so breakfast is as easy as opening the fridge door!

We have especially been loving these Orange and Cardamom Overnight Oats with Almond Fudge by Sarah Bell from Our Nourishing Table

Serves 4
Prep time: 15 minutes
Passive time: 12 hours

Overnight Oats ingredients:
2 cups organic rolled oats
3 tbsp hemp seeds
1 cup freshly squeezed orange juice
1/2 cup coconut yoghurt
1/4 tsp cardamom powder
1 and 1/2 tsp Vanilla extract
1/2 cup milk

Almond Butter Fudge ingredients:
3 tbsp almond butter
1-2 tbsp pure maple syrup
20g cacao butter

To make overnight oats:

  1. Mix all ingredients together, place into a jar with lid on and store in refrigerator overnight. 

To make fudge:

  1. Melt the cacao butter in a saucepan. 
  2. Add the almond butter and maple syrup. Whisk to combine. 
  3. Allow the fudge to come to room temperature before layering with overnight oats. 

This recipe makes 4 serves. Keeping them in the fridge will set the fudge. But you can also eat with a soft fudgy fudge or heat it up a tad for a runnier fudge.
