Whether you're a die hard fan of these bars or a newbie, you're going to love making these at home.

Ingredients
  • 10 medjool dates – normal, pitted dates will work too but you may want to warm them first
  • 2 ½ cups shredded coconut – shredded is much better than desiccated as desiccated is quite dry
  • 3 level tbsp cacao/cocoa 
  • 2 tbsp coconut oil, melted – if you don’t have coconut oil, you can try nut oils or more dates
  • 1 tsp vanilla bean paste – if you don’t have vanilla paste, or essence, the recipe will be fine without
Prep
  1. Pre-heat oven to 110 degrees C, no fan.
  2. Line one brownie pan with baking paper (just sit it loosely over the top, it will pack into the pan when the mix is added.)
  3. Have a second sheet of baking paper (larger than the top of the brownie pan) on hand with a second, identical, brownie pan.
Method
  1. Add all 5 ingredients to a blender (only 5 ingredients, are you kidding us!).
  2. Blend for 10 seconds. Open blender, scrape down sides if need be, and blend for a further 10 seconds.
  3. Pour mix into brownie pan (on top of baking paper). Use your hands to evenly spread mix into tray (can be very rough, just make sure you can’t see the bottom of the pan).
  4. Place second sheet of baking paper on top of brownie pan and place second brownie pan inside of first brownie pan, like stacking cups, so that you can use the top pan as a press. Put trays on floor and stand on top tray. (Move and jump around a little bit, you are trying to evenly compress and spread the mixture).
  5. Remove top brownie pan and top layer of baking paper and bake for 8 minutes
  6. Air cool to room temp and enjoy!

Note:

  • If you don’t have all the ingredients needed to make these Lamington Bar's don’t be afraid to experiment with what you do have!
  • Nuts and dried fruit in the blender, in equal parts, can act as the base to a bar or slice. Alternatively nuts and honey at a ratio of 3 to 1 (nuts to honey), can be blended to create a great base too.
  • Try to group your flavours into similar families.
  • Dates have a very warm, caramel flavour, as such, try and pair them with flavours which accompany caramel so nothing too tart or citrusy.
  • Likewise, if you blend coconut with honey, it will have a much brighter flavour so you might want to add lemon juice and macadamia nuts to create something fresh and summery, or lime and pineapple to relive those glory days
